Balsamic Chicken Salad
Balsamic chicken Salad is a real treat and is surely a healthy chicken recipe. For making this delicious salad you will need;
Skinless chicken 600 grams
2 crushed cloves of garlic
Whole grain mustard 1 Tablespoon
Balsamic Vinegar 2 Tablespoons
Cannellini Beans 1 Can (400 gm) drained
Cherry tomatoes 250 gm, halved
Low Fat feta cheese ½ cup
Rocket leaves 50 gm,
Olive oil spray
Mix garlic, mustard and chicken in a dish and whisk. Season chicken with salt and pepper and coat with the mixture. Refrigerate in the same dish for 20 minutes. Pre heat a barbeque plate and transfer the chicken on the plate after spraying with olive oil.
Cook on high heat for a minute while turning and lower the heat once the sides are golden brown. Cook on low heat for 5 to 6 minutes. Remove from flame and leave it for 15 minutes.
Now add rest of the ingredients in a salad bowl. Cut chicken into pieces and add in the salad and toss well. Cut the lemon in halves and serve the salad with lemon.
